I have used a few different things in some homes to get odor out. I am assuming it would work just as well if not better in a vehicle. You can use many different things but this is what I use on a regular basis.

Method 1: Take a cheap pair of pantyhose, and fill it with cheap un-used course ground coffee. I make these in 1' strips and tie it off tight. You can make several of these from one pair of pantyhose. It is good at pulling mold/mildew, and nicotine.

Method 2: Use charcoal without additives instead of coffee.

I would imagine you could use a ziplock bowl and poke a bunch of holes in it. I would keep these under seats, and in compartments. The more surface area the better.

I have a Csonka Smoker Cloaker that works very well. I turn it on during the Blessed Event, and I let it run in the truck overnight. I have those little smelly clippies in my vents, too, they help. This keeps my truck pretty stink free, but I only smoke once or twice a week in it.

The best odor eliminator that I've found for the car is ozium. Sold at most auto parts stores & car washes here in NY.
And for the headliner/cloth upholstery, Febreeze liquid spray. Lightly dampen the cloth & let it dry.
