I would go for a Double IPA like Green Flash, 2XIPA or 90 minute IPA. If you don't like IPAs, which I totally get, you should go for a Highland or Speyside Scotch. So your Balvenie 12 yr. or Glenfiddich 15 would work well.
Totally agree! I had an Ashton VSG a couple of weeks ago with a dram of Old Pulteney 12. They were excellent together, the salted caramel of the highlander mixed with the pepper/spice/nuttiness of the VSG was perfect. Like samiam2007 says, your Balvenie or Glenfiddich will go well with it. The Islays, no so much. Enjoy!
